Pizza Tour Itnerary & Course Information
Arrive in Rome, transfer by train to Chiusi Chianciano where you will be picked up and taken to our inn. Time to settle in and relax before our dinner at a family run osteria specializing in Umbrian Cooking.
Day 2
Cortona, Cooking Class and our Bruschette Festa
One of the most famous small hilltop towns in Tuscany described in “Under the Tuscan Sun,” Cortona is bustling with small shops selling unique artisan leather, textiles, clothing, jewelry, art and, of course, food. After a morning of wandering the streets we will return to Castiglione del Lago for a relaxing lunch. This evening, we will light up the wood in our outdoor grill and begin our first cooking experience in our own modern cucina. Our menu is designed around the traditional Italian grill with a taste of authentic bruschette and our own harvested olive oil followed by wood-grilled bistecche, Umbrian sausages, and small game with a selection of local vegetable dishes.
Day 3
Pienza, Cheese-making and Cooking Class
Pienza, a World Unesco Heritage site sets the stage for a delightful stroll overlooking the exquisite Val d’ Orcia. Postage stamp shops overflow with Italian made linens, handcrafted leather goods, ceramics and of course, the famous pecorino cheese of Pienza. Meet the cheese-maker of these outstanding raw milk peorinos and ricotta and deepen your appreciation for artisanal productions. This evening we will convene in our kitchen at Cucina della Terra where we make pasta and use our sheep milk cheeses.
Day 4
Wine Tasting & Cultural Tour of Montepulciano and Cooking Class
High in the hills of Tuscany overlooking the gorgeous Val di Chiana, a valley of olive groves and vineyards, you’ll walk through this historic wine town visiting a select group of artisans. We will visit a special winery for a tasting of the Vin Nobile di Montepulciano, Rosso di Montepulciano, Colli Chianti paired with a light merenda. Tonight our class focuses on Risotto & Saute Italian style.
Day 5
Market Day in Castiglione del Lago and Cooking Class

Day 6
Cultural Tour of Orvieto and Cooking Class
The town of Orvieto sits atop volcanic rock called tufa. Beginning at the base of the town, a necropolis bears the remains of Etruscan tombs. A 175-foot deep well, designed in the 16th century, remains a feat of engineering. At the top of the town lies a glistening Gothic cathedral, built in the 1300s and housing some magnificent frescos, mosaics, and stained glass. This is a town for shopping! We’ll stop for lunch in an authentic trattoria. This evening, we will return to the Cucina for a class cooking with a healthy assortment of fish and seafood from the Mediterranean.
Day 7
Morning Cooking Class, Cultural Tour of Siena and Dinner
Our day begins in the cucina for a class on polenta, salads, and egg cookery where we incorporate many of the local cereals and grains into our menu. By late afternoon we will be on our way to Siena, a small city designated by UNESCO as a World Heritage Site. The Piazza del Campo with eight streets radiating from the city’s center demands a full afternoon and evening to appreciate its historical and artistic significance. If you have ever wondered what Pan Forte and Ricchiarelli cookies taste like, this is the city to try them. Our evening ends with dinner in our favorite elegant restaurant in a 13th century cave.
Day 8
Early Morning Departure by Train to Rome
