The first signs of spring in Italy bring an invitation for an aperitivo. Simply put, it’s an informal request to meet up around 6 in the evening for a glass of wine, a spritz, or bitters on the rocks. This could be at home or a bar overlooking a piazza. Don’t expect dinner but do count on a few light snacks which can range from small bites of focaccia and a selection of salami to more elaborate preparations on slices of toasted bread. It’s a time to kick back and engage in conversation, whether politics, film, soccer or whatever is the current rage. It’s casual, social and relaxing.
Create your own aperitivo hour this summer on your patio, garden, pool or balcony. With a few simple ingredients you can create a board of snacks to accompany a chilled glass of wine. What a great way to slide into summer and celebrate easy living Italian style.
Some simple ideas:
Chunks of Italian cheese – parmesan, pecorino,
Bruschette (fave & pecorino, summer tomatoes, cauliflower, broccoli rabe )
Cicchetti (egg, shrimp, saor )
Fresh marinated anchovies on buttered crostini
Torta filled with spinach or swiss chard
Fritte (fried stuffed olives, aranci, suppli,)
Chips and peanuts
Dips made from beans surrounded by colorful raw vegetables
